Cheese and courgette rolls

24 rolls. Preparation 20 minutes, pickling 30 minūtes.

  • 1 lemon
  • 2 cloves of garlic
  • 8 branches of thyme 
  • 1/2 teaspoon of balsamic vinegar 
  • 4 tablespoons of olive oil 
  • 2 average-size courgettes
  • 100 g cheese "Holandes" 
  • 24 chives
  • salt
  • grind black pepper
Cheese and courgette rolls

 

1. Prepare vegetables: Grate lemon rind and extract juice. Chop garlic cloves. Cut courgettes with vegetable peeling knife into thin slices. Remove thyme leaves from branches.

2. Pickle slices of courgette: Mix lemon juice and lemon rind, garlic, thyme, olive oil, balsamic vinegar, salt and pepper in a big bowl. Add slices of courgette and mix it carefully. Leave it in the refrigerator for up to 30 minutes.

3. Fry slices of courgette: Bring to heat a large frying pan, dry extra liquid from slices of courgette and fry it lightly from both sides and leave it to cool. You can also grill the slices of courgette. Add salt and pepper.

4. Make courgette rolls: Slice cheese in long thin slices. Place one slice of cheese on top of each slice of courgette and roll it up. Rope up each roll with a chive.
